Next time you find yourself feeling uninspired with leftover shredded pork, I hope you’ll try this recipe. It became a favorite last year when mangos were at their peak. Even better – the kids love it and it’s relatively quick to throw together.
- Bring fat to medium heat in a large cast iron skillet. Add shredded plantains and cook until crisp and deep golden in color, stirring occasionally.
- Add leftover shredded pork and garlic and cook until pork is heated through.
- Season with salt to taste.
- Serve with mango slices and basil chiffonade.
