If you were to ask any of my cousins what was one item our Grandma would likely have in the fridge, they’d say braunschweiger. I remember enjoying it with her, spread on sourdough bread (with a bit of mayo) on many occasions. Honestly, I don’t think back then I really knew what it was I was eating. I just knew it was good.
Of course, the braunschweiger typically sold in stores isn’t as clean as I’d like it to be… so once I had successfully reintroduced a few spices I was determined to enjoy it again.
And it’s even better than I remember.
These “bites” are quite simple to put together. Instead of bread, I’m using Yucan Crunch (a crisp cracker with just one ingredient: yuca), braunschweiger (reintros: white pepper, coriander, & allspice), and a few extras. A touch of homemade coconut yogurt, green onions, and lemon juice. The yogurt and lemon complement the rich braunschweiger flavor and the Yucan Crunch makes for a great foundation to get it all in your mouth.
When I make these for Bugsy, I do it a la carte style – so he can eat it how he chooses. The Mister and Luv both like the bites served like in the photos. I’ve also made these with liverwurst (reintros: white pepper, coriander, & allspice) with the same happy results.
- Place braunschweiger slices on Yucan Crunch.
- Top with a small dollop of coconut yogurt, green onion slices, and a squeeze of fresh lemon juice.
- To make it a complete meal, serve with a salad of your choosing.
